The distinctive tastes of the regional Thai Cooking

Thailand literally means the "land of liberty" in the native language. The country is geographically divided into four main regions. Hence, Thai food would be described as four regional cuisines corresponding to the four main regions: Northern, Northeastern, Central and Southern. Each region has a different taste for food and cuisine according to different local specialty and culture.

(I) Northern Region - Sticky Rice Ball

Being a close neighbor of southwestern China, the Northern region is also connected to Myanmar (Burma) and Laos on its borders. With its capital in Changmai, people in the region eat a lot of steamed sticky rice balls as staple food. These sticky rice balls dipped in thick soup become a real local specialty. As it is located far from sea, the great dishes of the Northern region mostly feature meat, with the famous “Naem” pickled sausage that is reminiscent of the taste of Southern Chinese cuisine.

(II) Northeastern Region - Thai Spiciness and Sourness

Steamed sticky rice is also popular is the Northeastern region. Here the rice is served with grilled chicken, grilled fish, or “SomTam”, a salad of shredded papaya, dried shrimps, lemon juice, fish sauce, leeks and chili, a truly perfect combination of the most loved taste in Thai food – spiciness and sources.

(III) Central Region - Fish and Shrimp Sauce

Central Thailand is a great plain where the national capital Bangkok stands. This region faces the Indian Ocean within the regime of River Mekong. Its geographical location and the agreeable climate contribute to the abundance of rice, vegetables, fruits and seafood.
Fish sauce and shrimp sauce have been the famous produce of Central Thailand, the exotic gourmet sauce to many epicures.
The busy trading ports along the coast were the gateways to cultural exchanges with many foreign countries like Japan, India, Persia and particularly China. That is why we can observe obvious influences of tastes and cooking styles from these countries in Thai cooking and food. For example, people living in the Central Thailand have a similar dining habit as the Chinese as they enjoy dishes with soup and soft, fragrant rice.

(IV) Southern Region - Coconut and Seafood

Southern Thailand is the home to coconut trees. Bordered by the sea on both sides, the region has been producing coconuts and seafood for years.
People from the southern region are mainly Muslim or immigrants from India and the South Pacific countries, who love hot and spicy food. They use a lot of curry, coconut, coconut milk and coconut sugar in cooking. The most well-known dish from the region is fried fish in curry sauce.Other local specialty includes cashew, Sataw, banana, durian and pineapple.
